These beans come from the region of Matagalpa, known as the Pearl of the North. Agriculture in this mountainous region is concentrated on the cultivation of coffee, bananas and cocoa. These beans have a balanced bitterness, a silky texture, aromas of nuts, spiced rum, malted beans and a particularly long cocoa finish. And put that around a thin layer of delectable pistachio filling….
